Chickpea Fritters

Ingredients
400g can of chickpeas, liquid reserved
1 medium onion, finely chopped
1 cup plain white flour
3/4 Tbsp baking powder
1 1/2 tsp salt
1/2 tsp garlic powder










Method
Heat a deep fryer to 170C.  In a large bowl roughly mash the chickpeas.  Add the onion and dry ingredients mixing well.  Stir in the reserved liquid from the chickpeas to make a thick batter.  This should be about 3/4 cup, water can be substituted.  Drop teaspoonfuls of the batter into the hot oil, cook for 3-4 minutes turning the fritters until they are evenly golden and crisp.  They should be fluffy on the inside.  Drain on absorbent paper and keep in a warm oven until all the fritters are cooked.  Serve with tofu tartar sauce.

Makes approx. 2 dozen fritters
